As I am now slightly anemic, I have been looking for ways to add iron to my diet. I’ve been researching iron-rich foods and also learning about what helps and hinders the body’s ability to absorb iron. For example, calcium and caffeine prevent full iron absorption, while Vitamin C helps the body absorb iron. These rules mainly pertain to iron we receive from plants. Iron from meat (red meats are high in iron) are not as affected.
I recently learned that artichokes are a good source of iron, which is great for me because I love artichokes! That also makes this salad a particularly healthy combination as tomatoes are very high in Vitamin C.
Artichoke hearts, chopped
Black olives, chopped
Cherry tomatoes, cut in half
Mix fresh ingredients in a bowl and sprinkle with Italian dressing.
The salad is best after a few hours in the refrigerator when the flavors are well-mixed and saturated.
