This is my favorite salad! It has a delicious combination of sweet and tart with a lot of nutritious value.
Here’s what you need:
- romaine lettuce
- Mandarin oranges
- slivered almonds
- Italian dressing
Here’s what you do:
Wash your spinach and romaine and tear. Place in bowls.
Chop tomato into small bites. Place on top of lettuce bed.
Distribute Mandarin oranges over salad.
Pour a little of the juice from the oranges over the salad.
Sprinkle slivered almonds and coconut.
Add a few drops of Italian dressing for some extra zest. Not much dressing is needed with all the other flavors.
Note: In addition to being delicious, this salad is great for people who need more iron in their diet (like me!). Spinach is a great source of iron. Also, the oranges and tomato are excellent sources of Vitamin C, which helps your body absorb iron.
