Lemon Rosemary Tilapia

A nice, healthy dinner to start the week.

 

Here’s what you need:

  • tilapia filets
  • onion
  • rosemary
  • lemon
  • couscous
  • garlic powder
  • olive oil

Sprinkle your tilapia filets with rosemary, lemon and garlic, and let them sit for a little while to soak up the flavors.

Chop your onion. Drizzle a little olive oil into a nonstick skillet, and start cooking the onion on medium heat. After about 2 minutes, add the tilapia. Squeeze on more lemon juice.

Cook couscous as directed on package. (It takes about 5 minutes.)

When the fish is flaky, it’s ready to serve. Serve it over a bed of couscous. We had our lemon rosemary tilapia with a side salad and edamame.
