Sometimes we improvise.
Last week, I was swamped with work and didn’t want to take the time to go grocer shopping or go out to eat. Of course, we did have to eat though. I rummaged through our pantry and refrigerator, and here’s what we ended up with.
Pesto Mozzarella Grilled Cheese with Side Salad:
Here’s what you need:
- mozzarella cheese
- Pam cooking spray
Spray your frying pan with Pam. Spread pesto on each slice of bread. Cover one slice with pieces of mozzarella. Then add on slices of avocado and tomato. Top with a second piece of bread and cook until cheese is melty and bread is toasty.
I served it with a side salad of lettuce, tomato, avocado and shredded carrot.
