Quinoa is a grain-like crop that produces seeds that are packed with amino acids. It has been a staple in South American countries such as Peru for thousands of years, but it has recently become popular here.

It’s extremely healthy and cooks like rice – very easy to make.

Quinoa is extremely versatile, but here’s one way to enjoy it:

 

Here’s what you need:

  • quinoa
  • corn
  • black beans
  • cilantro
  • lime
  • 2 chicken breasts
  • onion
  • cumin
  • tomato
  • salt and pepper
  • olive oil

Chicken and onion

Quinoa

Cook the chicken breasts on medium in a skillet with a little olive oil, salt, pepper, lime, cumin, and diced onion (about 1/2 a small onion). Cook the quinoa as directed (same method as rice).

Heat the corn and black beans.

Chop cilantro, and half a tomato.

When the chicken is cooked through, cut it into bite-sized pieces.

When the quinoa is ready, add the corn, black beans, cilantro, chicken, and tomato. Sprinkle with a little cumin to taste, and a good dose of lime juice.
