As promised, here’s a delicious strawberry pie recipe! I got this recipe a few years ago from a wonderful friend and it’s one of my favorite desserts!
I use a store-bought graham cracker crust to keep it simple.
Here’s what you need:
1 graham cracker pie crust
5 cups strawberries, rinsed and halved
1 cup sugar
1/2 teaspoon vanilla
3 tablespoons cornstarch
1 tablespoon apple juice
1/2 cup apple juice
1 small package strawberry Jell-O
Throw your five cups of strawberry halves in a saucepan with the sugar and vanilla. Cook on medium until the sugar dissolves.
Combine cornstarch and the tablespoon of apple juice and add it to the pan.
Heat the 1/2 cup apple juice for 30 seconds, and whisk in the Jell-O. Remove the strawberry mixture from the heat and stir in the Jell-O.
Pour the mixture into the pie crust and let it cool in the refrigerator for six hours or more. (It’s best to just make it a day in advance so it can set completely before it’s time to eat it.)
Whip the whipping cream, and add it to the top just before eating. (I don’t have a picture with the cream, but I like to make a border around the edge, and then add a whole strawberry to the middle of the pie for garnish.)
