I got this recipe from Betty Crocker’s Bridal Edition Cookbook, which is a great resource for anyone looking to get some basic cooking tips and a wide range of recipes.
I’ve only made this twice, but it’s one of my favorites!
4-6 thick pork chops
1 green bell pepper chopped
1 onion chopped
1/2 cup shredded cheddar cheese
4 slices of bacon, chopped
1 cup Corn bread crumbs
Salt and pepper
Start by cooking the bacon; then add the pepper and onion to the pan. Season with salt and pepper. After a few minutes, turn down the heat and add the bread crumbs. Then add the cheese and a little water (about 1/2 cup).
Cut the pork chops through the center to make a pocket.
Fill the pork chops with the mixture and bake at 350° for about 45 minutes covered with foil. Take off foil, and bake a few more minutes until pork is cooked through.
For the corn bread crumbs, I make Jiffy cornbread muffins and then crumble a couple for the crumbs. We eat the others as a side dish. Yum!
