Chicken Ceasar Pitas

Alright, this is a super-easy meal that’s great for a weekend lunch or dinner on a busy week night. It’s a fast, low-maintenance, minimal-mess, refreshing and relatively healthy (as long as you don’t overdo it on the dressing) dish.

Chicken Ceasar Salad

All you need is:

  • pita pockets
  • chicken breasts
  • Romaine lettuce
  • tomato
  • onion
  • Ceasar dressing

I’m not going to quantify the ingredients because it’s up to you. Just pan-fry a couple boneless, skinless chicken breasts in a little olive oil; season with a little garlic wine seasoning and thyme; and chop into bite-sized pieces. Wash and tear your lettuce. Chop your tomato and onion and season with salt and cracked pepper. Throw it all together in a bowl with some dressing, and toss. Toast your pita pockets, and fill them with the salad.
